So honestly this recipe is a bit of a cheat. What do I mean by cheat? To cut down the cook time the base of my sauce is a pre-made tomato sauce. You don’t have to use a jarred sauce if you have the time to use diced tomatoes or another from scratch base. I didn’t have the time when making this recipe to go fully from scratch and there are plenty of healthy and delicious jarred sauces that I would recommend using as your base. So in this case, cheating isn’t all bad.
The real shining star of this dish is the pasta itself. NuPasta is a brand of gluten free pasta which has allowed me to enjoy a pasta for the first time in years. A full pack (which is considered 1 portion) is only 25 calories and completely gluten free. So if you’re gluten intolerant or just looking to cut back, this is a great pasta substitute!

- 1/2 cup Tomato sauce (I used a President’s Choice basic tomato and herb sauce)
- 1/4 onion fined diced
- 1 clove of garlic minced
- Asparagus (or really any veggie- tonight’s pasta has peas instead of asparagus!)
- Optional: Grated Parmesan cheese to top
In a small frying pan saute the onion and garlic in a bit of olive oil. Once the garlic and onion are soft, add in your tomato sauce. Season with salt and pepper. Let the sauce cook for at least 10 minute to allow the flavours combine. Add in your vegetables and cook until they begin to soften. Now add in your NuPasta. Once the NuPasta is heated all the way through, you’re ready to eat! I’m a cheese lover so I top the dish with parmesan cheese but this is completely optional.
