Black Bean Burger Recipe

Full disclosure, not all the recipes I try come out the way I plan. Sometimes, despite following a recipe to the “T” one element (or several), just don’t work out. These “failed” recipes are a great example though of how in cooking, sometimes even a “mistake” can become something great! These black bean burgers are a perfect example of this. While they didn’t turn into the burger patties I had hoped for, they were still incredibly delicious and made a great side dish! I’ve been eating them over the past couple of days with sides of veggies and salad, instead of in a bun as they were intended. They’re super convenient too- since I’ve been keeping them frozen individually, I just pop one out and have it for dinner or bring it to work to have with lunch.

I have included the recipe and instructions for anyone who would like to try them (they really are delicious!) But if you’re looking to eat them on a bun I would recommend adding in an egg or two, some breadcrumbs or parmesan cheese as a binding element. I’m fairly certain that was the miss here- the quick oats didn’t hold the patties together well enough.

Ingredients

  • 2 cans black beans, rinsed and drained
  • 1 onion, minced
  • 3 garlic cloves, minced
  • 2 carrots, shredded
  • 1/2 cup quick oats
  • 1/2 cup canned corn
  • 1 tbsp Soy sauce
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp chili powder (I used a bit more, but I like some heat)
  • 1/4 tsp cayenne pepper
  • Salt and Pepper to taste

Heat one tablespoon of olive oil in a pan. Combine onions, garlic, salt, and pepper and cook until onions are translucent. Add carrots, cumin, coriander, chili powder, and cayenne pepper until carrots are tender. Remove pan from heat.

In a bowl, mash the beans and then add the contents of the pan along with the soy sauce and quick oats. Mix and form patties. Place in freezer for 30 minutes to set. Cook patties on a pan coated in cooking spray over medium heat, flipping halfway.

Enjoy on a bun or lettuce wrap with all of your favourite burger toppings!
